Shrimp Broth Pasta

My aunt makes the best pastas. So I took on what she deemed as her "easiest pasta recipe". Halfway through, I learned that "easy" required being hunched over for a long amount of time peeling and de-veining cold, gray, slimy, little shrimp and nearly cutting my finger off while chopping a tomato... Definitely not what expected "easy" to be, however, in the end, I appreciated it all. As someone who usually buys some Ragu, adds a bunch of crap to it, then calls it a day, I am proud to say that this pasta sauce was made from scratch! AND it included homegrown Basil and Parsley from my Aunt's backyard herb garden! Boo ya.



Shrimp Broth Pasta
Ingredients:
-1 pound of shrimp
-1 1/2 cup water
-1 onion
-5 cloves of garlic
-7 plum tomatoes
-1 tablespoon olive oil
-1 1/2 white wine
-Red Chili Peppers
-Salt and Pepper
-1/2 cup Basil
-1/4 cup Italian Parsley
-1 packet spaghetti noodles

Directions:
1. Peel raw shrimp and remove veins. Many people do not remove the veins from their shrimp. However, I have always done so because the vein is actually not a vein, but a digestive tract, and I'd rather not eat poop.
2. Take peelings and heads and boil with water on low. Let boil for the remainder of prep time, this broth will be added to the sauce later. You should also boil your pasta noodles.
3. Chop onion and tomatoes into cubes. Finely chop parsley and basil, and mince garlic.
4. Saute onions and garlic in olive oil until wilted and translucent.
5. Add in chopped tomatoes. Let cook for 5 minutes, stirring every now and then. At this point you should also begin to boil your raw spaghetti noodles. I always put a couple pinches of salt in the pot of boiling noodles.
6. Add in 1 1/2 cup of white wine. Let simmer on medium for about 15 minutes, stirring occasionally.
7. Take boiling shrimp broth and using a strainer, add to pasta sauce mix.
8. Continue to simmer on medium for 5 minutes, stirring often and smashing tomatoes.
7. Add salt and pepper to taste.
9. The sauce is almost ready! Now to add the shrimp and the actual pasta noodles. Put stove on low and place the shrimp, basil, and parsley atop pasta sauce. Place hot, boiled noodles over the shrimp and toss noodles with sauce. The heat and steam from both the sauce and the noodles will allow the shrimp to cook.

10. Pasta is now ready to serve.



"Hard" work pays off, this pasta was so yummy. :)
